BEFORE YOU START

A little detail makes it lovely.

Let the mushrooms sit against the hot pan between stirs. They need time to brown before the cream goes in.

Let's make it

  1. 01

    Cook the rigatoni

Boil the pasta in salted water according to package directions. Save a mug of cooking water, then drain.

  2. 02

    Brown the mushrooms

While the pasta cooks, warm the oil and butter in a wide skillet over medium-high heat. Add mushrooms and cook for 7–9 minutes, stirring occasionally, until their liquid evaporates and they begin to brown.

  3. 03

    Add the cream

Reduce the heat. Add garlic, salt, and pepper and stir for 30 seconds. Stir in cream and simmer gently for 2 minutes.

  4. 04

    Toss to finish

Add pasta and a splash of pasta water. Remove from heat, fold in the cheese, and toss. Add more pasta water, a spoonful at a time, for a silky consistency.
