BEFORE YOU START

A little detail makes it lovely.

Keep a mug of pasta water before draining. Its starch helps the sauce cling to every piece of penne.

Let's make it

  1. 01

    Boil the pasta

Bring a large pot of salted water to a boil. Cook the penne according to the package directions until just al dente. Reserve the pasta water before draining.

  2. 02

    Soften the peppers

Meanwhile, warm the oil in a wide skillet over medium heat. Add the peppers and cook for 6–8 minutes, stirring, until softened. Add the garlic and cook for 30 seconds.

  3. 03

    Make it creamy

Lower the heat. Stir in the cream, salt, and pepper, then simmer gently for 2 minutes. Add the drained pasta and a splash of reserved water.

  4. 04

    Toss and finish

Take the pan off the heat and fold in the Parmesan. Toss until glossy, adding a little more pasta water if needed. Taste and adjust seasoning before serving.
