BEFORE YOU START

A little detail makes it lovely.

Stir only until the flour disappears. A few small lumps are fine; overmixing can make pancakes tough.

Let's make it

  1. 01

    Mix the batter

Whisk flour, baking powder, sugar, and salt in a bowl. In another bowl whisk milk, egg, and melted butter. Fold wet into dry just until combined, then rest for 5 minutes.

  2. 02

    Warm the pan

Heat a nonstick skillet over medium-low heat and brush with a little butter. Add about ¼ cup of batter for each pancake, leaving space between them.

  3. 03

    Flip and finish

Cook for 2–3 minutes until bubbles appear and the edges set. Flip and cook for another 1–2 minutes, until the center is cooked through. Adjust the heat so the outside does not burn.

  4. 04

    Make a morning of it

Repeat with remaining batter. Divide between four plates and top with berries and maple syrup.
